Shakes are one of the most popular menu items at the LifeCafe, and that comes as no surprise: They can quickly and conveniently nourish your body with sufficient protein and a balance of other nutrients. They are also highly customizable to satisfy your individual taste and nutrition goals.

While it’s easy to order your usual, you can now introduce some variety into your routine with the create-your-own shake option. Below are how seven LifeCafe team members use it to craft their go-to orders.

Christopher Pica, LifeCafe lead at Life Time Middletown – Red Bank in Middletown, N.J.

Go-to order:

“I compete in men’s physique competitions and getting appropriate nutrients is important for me,” says Pica. “I train at 6 a.m., five times a week, and this shake order ensures I get the nutrients and calories needed for recovery. I’ve always been a chocoholic, and I love the flavor profile you get here with the addition of peanut butter and almond butter. The oat milk makes the shake slightly higher in carbohydrates, which works with my nutrition plan — and it also makes the shake taste smoother.”

Kristy Carris, LifeCafe leader at Life Time in Rochester Hills, Mich.

Go-to order:

“This combination of ingredients keeps me energized, satisfies my sweet tooth, and gives me a boost of daily greens that I often need,” says Carris.

Michael Kline, LifeCafe leader at Life Time in Franklin, Tenn.

Go-to order:

“I like having just a touch of chocolate flavor in my shake, which I get from the cafe mocha flavored Life Greens,” says Kline. “And being in my late 40s, I like taking the L-glutamine for gut health and brain health. I work hard and exercise daily and don’t always achieve my protein goals through meals alone, so the extra scoop of whey isolate protein powder goes a long way.”

Joiie Ramirez, LifeCafe leader at Life Time Sky in Manhattan, N.Y.

Go-to order:

“I love to play around with ingredients for shakes because some of us may grow tired of having the same thing too often,” explains Ramirez. “This order is my recent favorite, which I’m calling Mango Mayhem. If mango isn’t available at your local LifeCafe, I’d suggest pineapple instead to make it a Pineapple Pizzazz!”

“Collagen helps provide structure, support, and strength to your skin and connective tissues,” he adds. “Mangoes are a source of vitamins A, C, E, and K, along with essential minerals like potassium, magnesium, and folate. The flavor of the shake brings back a taste of my childhood when my mom would make vanilla-orange ice cream pops, a treat I still cherish today!”

Mercedes Morones, LifeCafe leader at Life Time in Shenandoah, Texas

Go-to order:

“My favorite way to make a shake is to match the ingredients to whatever flavors I’m craving,” says Morones. “Recently, that’s been the chocolate flavors in this shake. It tastes like a guilty chocolate treat that I’m not ‘supposed’ to have, but it’s nutritious and an easy way to get my protein in.”

“This is very similar to our Mocha Madness shake, which I love, but I prefer to make the substitution to the milk, add more protein with collagen, and add the Life Greens to get me closer to my daily needs of greens and veggies,” notes Woodford. “Being able to do that in my breakfast shake makes things so much easier for me when I’m on the go. The addition of collagen protein adds a number of health benefits. It’s a win-win!”

Dave Close, LifeCafe leader at Life Time in Laguna Niguel, Calif.

Go-to order:

  • Base: 2-percent milk
  • Protein: Vanilla or chocolate LTH Whey Protein
  • Mix-ins: Peanut butter, banana, spinach, berries (blueberries, raspberries, or strawberries)

“I like to say that I’ve been making this shake for a year at Life Time, but 13 years at home,” says Close. “I use these ingredients as the base of my shakes, and then I’ll also add anything else flavor-wise that strikes my fancy on a given day. I always use vanilla LTH Whey Protein daily, and then if I want a ‘dessert’ at home in the evening, I’ll make another shake using the chocolate LTH Whey Protein.”

There’s no doubt that eating well is essential for good health and a critical factor in achieving desired health goals. Yet there’s also no question that many of the food options most widely available usually aren’t the ones that are the best for us.

The LifeCafe at Life Time has always been committed to being a solution to this challenge. It’s a place where you can get a sit-down or grab-and-go meal that’s been developed by chefs and approved by Life Time’s own nutrition and fitness professionals.

The menu regularly evolves, and the most recent refresh is an elevation that was inspired by members and team members. “Members shared that they want more dynamic options and clarity on what they’re putting in their bodies,” says Erica Speranza, director of operations for LifeCafe. “That’s what we want to deliver with this new menu — as much detail and care as possible.

“We’ve leveraged the expertise of our field leaders and chefs to help create these new recipes and build a menu that offers exactly what members are looking for,” Speranza continues. “The quality of our ingredients and offerings is of the utmost importance to our team, and we know its what members are looking for too. You’ll see that come through even more with these menu changes.”

The LifeCafe team went straight to manufacturers — versus distributors — to research the food vendors offering ingredients aligned with its “if it’s here, it’s healthy” mission. “We worked off an ingredient-first mentality, starting with those we knew we could get at a high quality and then developing the recipes around them,” Speranza explains.

Nearly 150 LifeCafe locations are launching a new LifeCafe menu in February 2025. Here, Speranza shares four of the things she is most excited for members to experience with the new menu.

1. Grass-Fed Steak as a New Protein Option

“We’re very excited to partner with a vendor called Teys for our beef,” says Speranza. “Their U.S. headquarters are in Chicago, Ill., but they source their sustainable beef from more than 7,000 family-owned farms in Australia. They’re providing us with grass-fed sirloin that is premium quality, delivers high protein content, and has that ‘juiciness’ factor.

“Teys uses 100-percent-grass-fed beef that is Certified Humane accredited, which ensures high animal welfare standards, including proper diet, housing, and handling,” explains Speranza. “The cattle are never confined and are free to roam. They are also free from antibiotics, hormones, or chemicals. Teys’ cattle are fully traceable throughout their lifetime so they can ensure all [their] raising claims are verified from birth. It matters what’s put into the body of the animals that we then put into our bodies.”

2. Added Dressing Flavors

“We’re excited to partner on our dressings with a U.S. manufacturer called Conway Dressings,” says Speranza. “They use quality, all-natural ingredients and make the dressings in small batches before distributing them to Life Time. This allows us to tell them the ingredients we want to use and send them the recipe to replicate.

“We will feature six new dressings, including ranch, chipotle ranch, balsamic, Caesar, blue cheese, and shoyu-sesame, in various items,” says Speranza. “For example, we’ll have a Buffalo Wrap with blue cheese dressing and a Shoyu-Sesame Bowl that features that flavor glaze.”

3. Transparency Around Macronutrients

“For the past few years we’ve shown calories on the LifeCafe menu but not macronutrients — now we’re changing that,” says Speranza.

“‘Healthy’ means something different to everyone. Someone’s view of healthy eating might mean carb-loading to align with their workout and fitness goals. For someone with blood-sugar concerns, for example, it might mean higher protein and low carbs. There are a lot of different priorities and needs, and giving members information about macros allows them to be confident in how the food they’re eating supports their healthy-way-of-life journey.

“We’re also transparent about what’s in our food in other ways,” Speranza continues. “We choose to use high-quality ingredients with no artificial preservatives, artificial additives or fillers, bleached flour, or trans fat. You’ll also see menu items appropriately labeled with common food allergens — milk, tree nuts, peanuts, wheat, egg, sesame, fish — and for food preferences — gluten-free, dairy-free, vegetarian, and vegan.”

4. More Customizable Options

“On several of our new menu offerings — such as the burger, the bowls, and smoothies and shakes — we’re offering options for customizations, including new ingredients that can be added or removed from a meal to make it exactly what you want it to be,” says Speranza.

“For the burger, for example, we have six add-on options, including bacon, pickled red onions, coleslaw, and avocado. For the Power Bowls, we built a base of ingredients and then are letting members choose the protein they want — chicken, grass-fed steak, or falafel, and in some locations, salmon — with an easy option to double the protein amount if they choose. The three Power Bowl base flavors include Mediterranean, Shoyu-Sesame, and Tex-Mex.”

Whether you’re chilling poolside or seeking a post-workout refuel, the LifeCafe at Life Time has shakes, meals, snacks, and more to satisfy your nutrition needs — and desires! — this season. LifeCafe chefs and Life Time dietitians and trainers collaborated to create these nutrient-rich menu items, all with the focus of nourishing and powering your body.

To inspire your next order, we asked a few Life Time dietitians about their go-to menu items this summer. Here’s what they had to say.

3 Ways To Order

1. Vegan PB & B Shake

When it’s hot out and you’re craving ice cream or frozen coffee drinks, this shake hits the spot. It’s cold, creamy, and the perfect mix of mocha, banana, and peanut butter flavors. I like to add in Life Time Vanilla Collagen Peptides in addition to the chocolate vegan protein for an extra boost. It truly tastes like a summer treat and gives me almost 40 grams of protein (with my customization). Plus, this shake includes café-mocha-flavored Life Greens, which are loaded with antioxidants from 50 different types of veggies and fruits.

2. Turkey Avocado Sandwich

My go-to order is the Turkey Avocado Sandwich with a few modifications. I swap for toasted gluten-free bread, ask for no tomato, and add bacon as well as extra turkey. These changes help fit my personal taste preferences, dietary needs, and protein goals.

3. Mediterranean Salad

The hot weather has me craving cold foods right now, and this salad is my favorite one on the menu because of all the ingredients and colors. I add in an additional cut-up beef patty to help boost the protein (over 50 grams in total) and love that it provides over two servings of vegetables. The vegetables provide fiber to keep me full and water to hydrate, along with some healthy fats from the olives.

4. Chicken Gyro Bowl and Acai Bowl

The Chicken Gyro Bowl is kind of like a hybrid salad-bowl — it’s a lighter meal choice for the days I don’t feel like fully committing to a salad. It’s full of kale and brown rice, as well as protein and additional veggies of cucumbers, onions, and tomatoes. The carb-to-protein ratio is something that works well for me at lunchtime. I substitute the chicken for beef, and I add harissa paste, which when mixed with the tzatziki sauce creates a mildly spicy flavor that I really enjoy.

During the summer months, I also often order the Acai Bowl, as it’s cool, refreshing, and surprisingly filling. I add Life Time Vanilla Collagen Peptides, which blend into the acai, for added protein and to make the bowl more macronutrient balanced. I also have them drizzle either peanut butter or almond butter on top for a salty-sweet flavor profile. It leaves me so satisfied! Any time I can sneak in collagen, I consider it a big win — it’s great for improving the nutritional profile of my food and positively impacting my skin, hair, muscles, and joint health.

  • You’ll receive an estimated wait time.
  • Pick up your order from the poolside bistro. At some clubs, a team member may deliver the order right to you on the pool deck.

While a common appetizer at parties and for entertaining, charcuterie boards can serve as a great main-course alternative, too — especially if the size of your gatherings are more limited. These spreads enable you to still enjoy a variety of foods, but without the time, hassle, and endless leftovers that come with cooking and cleaning up a multi-course meal.

The advantages of charcuterie-board dining abound: The food combinations are endless and customizable to your preferences; it can be as big or small as you desire; besides a handful of small plates, there’s only one board to clean; and everything can be thrown together in a flash.

Plus, if you’ve ever enjoyed a charcuterie board, you know how beautiful they can be — who wouldn’t want to enjoy one?

For a combination that stuns both eyes and taste buds, you will want to be thoughtful in your selections. So, we asked Chef Ryan Dodge, executive chef of Life Time’s LifeCafes nationwide, for his tips on creating your own your charcuterie board at home.

“When I think of a charcuterie board, two words come to mind: opulence and luxury. A well-designed board offers an entire experience, from providing a span of textures to including all flavor notes,” says Dodge. “You can take a bite 50 different ways from a thoughtfully composed board — it’s like a pick-your-taste adventure. It feels like a lavish experience.”

He says a true charcuterie board honors what you place on it and what you pair together. To do so, he advises including something from each of the categories below to ensure you hit on a variety of textures and flavors. Select what’s seasonal, be inspired by a region, focus on a culinary style, or pick and choose from items what you love most.

The star of the board

“Cheese is, in my opinion, the most important part of the spread,” says Dodge. “It’s such a preference food: At my gatherings, the smoked Gouda and sharp cheddar are the first to disappear. Bleu cheese is aromatic and will impact other ingredients, so be conscious of what you pair it with. Cambozola is pliable and spreadable at room temperature. You could even get really festive and build a snowman out of Boursin. Whatever your liking, select a few options for variety.”

Suggested choices: Brie, Manchego, chèvre smoked Gouda, sharp cheddar, Bleu cheese, Cambozola, or Gournay cheese; non-dairy alternatives, such as Treeline herb-garlic French-style cheese, Kit Hill chive cream cheese spread, or Miyoko’s smoked vegan mozzarella

Something with texture

“This is where I like to think about breads and crackers,” says Dodge. “They not only provide texture, but they also serve as your vessel for other ingredients. I’m personally picky in this category as I know whatever you select will influence what you choose to eat it with. You want a strong vessel.”

Suggested choices: Bread, such as a baguette or other artisan bread served plain or lightly toasted with extra-virgin olive oil; crackers, such as thin wheat, almond flour, or flax seed

Something salty

“Charcuterie stems from French cooking traditions, and before nitrates were introduced, the technique was rooted in foods naturally preserved by salt, so it’s a category not to forgo,” says Dodge. “Depending on your selection, choices in this area could also offer spice or heat.”

Suggested choices: Salami, porchetta, speck, prosciutto, sausage, or capicola

Something sweet

“Your choices here compliment your ones in the salty and acidic categories,” says Dodge. “Outside of fruit, you could also look to foods that are candied or honeyed.”

Suggested options: Fresh, seasonal fruit, such as apples, pears, pomegranate, persimmons, or grapes; dried fruit, such as cranberries, figs, dates, or apricots; fruit spreads, such as jam, marmalade, or chutney

Something acidic

“I love using pickled vegetables here,” says Dodge. “Acidic food can be tart, sharp, sour, and bitter, which is great for balancing out the sweet and salty notes.”

Suggested options: Pickles or pickled vegetables, such as pickled artichokes, beets, or asparagus

Bonus Adds

  • Nuts, such as Marcona almonds or candied pecans. “Because nuts are so widely used, take this as an opportunity to pick a more divine selection to add richness,” says Dodge.
  • Olives, such as kalamata or green stuffed with garlic, goat, or bleu cheese. “Hit the olive bar at your local grocer or stuff your own,” says Dodge. “They can add good variety to the board.”
  • Roasted garlic cloves (see recipe below). “Roasted garlic is good for your soul,” says Dodge. “It’ll warm you right up in the winter months.”
  • Spreads, such as balsamic-caramelized onions (see recipe below), olive tapenade, or a chèvre dip. “Balsamic-caramelized onions take some time to cook down, but they’re so worth it,” says Dodge.
  • Raw veggies, such as peppers, carrots, or cucumbers. “Charcuterie boards are a great opportunity to fit in veggies,” says Dodge. “Pick ones that are fun and snappy.”

Recipes

Roasted Garlic

Makes four servings
Prep time: 5 minutes
Cook time: 45 to 50 minutes

Ingredients

  • 1 garlic bulb
  • Extra-virgin olive oil to taste
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400 degrees F. Remove the top of the garlic bulb by slicing with a sharp knife about one-quarter-inch down so the cloves are exposed.
  2. Drizzle the bulb with olive oil and season with salt and pepper. Wrap in aluminum foil and place in the oven. Roast for about 40 to 45 minutes, until the bulb is golden brown and soft.
  3. Remove the cloves by simply squeezing the head of the bulb, or use an oyster fork or paring knife to remove individually. Serve warm or let cool.

Balsamic-Caramelized Onions

Makes 1.5 cups
Prep time: 15 minutes
Cook time: 1.5 hours

Ingredients

  • 4 red onions
  • 1/3 cup avocado oil
  • 1/2 cup balsamic vinegar
  • 3 tbs. honey
  • Salt and pepper to taste
  • 1/2 cup water, plus more to taste

Directions

  1. Clean the onions by removing the outer skin and root. Thinly julienne.
  2. Add the avocado oil to a large pan over medium-low heat. Sauté the onions until they start to become translucent with a little browning.
  3. Deglaze the pan with the balsamic vinegar and stir.
  4. Add the honey and stir.
  5. Continue to cook until the liquid is reduced and no longer visible.
  6. Season with salt and pepper. Add 1/2 cup water and reduce until the liquid is gone. Continue adding water and reducing water as needed until onions reach desired texture and candy-like taste.
  7. Cool and serve.
